Red Gurnard, or Pūwhaiau, is the most common of the Gurnard species found in New Zealand waters.
Widespread around New Zealand, Red Gurnard are found on sandy shell seabeds to a depth of approximately 180 metres and are caught all year round. Nicknamed ‘Carrots’ for their bright orangey-red colour, they have large pectoral fins that open up like wings and 'feeler feet' that stir up the sea floor to release food.
Gurnard has a lovely small, sweet and succulent white flake with a low oil content. Our Gurnard Fillets are relatively delicate, so lend themselves perfectly to quick cooking methods. Dust in a little flour, pat off the excess, then sauté in a little oil, finishing with a dab of butter and a simple squeeze of lemon juice.
