Frozen Hapuku Fillets

Hāpuku, also known as Hāpuka or Whapuku but commonly known as Groper in the South Island, is a wreck fish. 

Their white flesh is firm and textured, and holds its shape nicely when cooked. Hāpuku have a wonderful big flake with a cream-like finish after cooking, which brilliantly suits frying, poaching, steaming, baking or being grilled on the barbeque.
