Kahawai, recognisable by their torpedo-shaped, dark green bodies with white bellies, have firm flesh with a large flake and dark pinky-red coloured flesh, turning browny-beige when cooked. They are versatile in cooking and suitable for pan-searing, curries, fish pies, and smoking due to their high-fat content.
